Winter Wonderland Smoothie Bowl

Looking to bring some winter magic into your breakfast routine? This smoothie bowl is nourishing, easily customizable, and fun to make (especially for kids!). It’s also a great way to encourage kids to have a healthy breakfast during the busy holiday season when there are so many other distractions. The smoothie bowl shown here is inspired by the magic of a winter night sky, but you can take this concept and run with it however you like!

 

Smoothie Ingredients

  • Ripe, frozen banana
  • ½ c plain or vanilla yogurt of choice (vegan and/or unsweetened as desired)
  • Optional ½ c frozen blueberries for a darker color
  • Splash of milk as needed (vegan if desired)
  • Few pinches of blue spirulina for color

 

Toppings

  • Snow: unsweetened shredded coconut
  • Planets: blue and purple chocolate-covered peanuts (vegan and/or naturally-colored as desired, or use colored chocolates for a peanut-free version)
  • Big stars: Coconut Macadamia OHi Bars cut with miniature star-shaped cookie cutters
  • Small stars: sugar pearls (omit for a lower-sugar version)
  • Snowflakes: apple slices cut with a miniature snowflake cookie cutter

 

Directions

  1. In a high-power blender, blend the smoothie ingredients until you achieve a thick, rich texture, adding a splash of milk as needed. Keep your smoothie thick so that the toppings won’t sink down to the bottom! Add just enough blue spirulina to achieve a light blue color.
  2. Pour three quarters of the smoothie into a shallow serving bowl (shallower is better since it will give you more surface area to decorate).
  3. Add another couple pinches of blue spirulina to the remaining smoothie and re-blend to achieve a darker color.
  4. Add the darker smoothie to the serving bowl in a few dollops and gently swirl them together. You can also add a couple dollops of additional yogurt to get some white swirls.
  5. Make snow on the ground and in the sky using shredded coconut.
  6. Add chocolate-covered peanuts (or other chocolate candies) as planets.
  7. Warm up an OHi bar until just barely soft. Cut out stars using mini cookie cutters and add them to the sky.
  8. Add other sugar pearls, sprinkles, etc, to represent additional stars.
  9. Cut an apple into thin slices, then cut out snowflakes using mini cookie cutters. Add them to the sky and ground.
  10. Bonus: if you have animal cookie cutters, add polar bears, penguins, reindeer, or other cold-weather creatures to your scene.
  11. Enjoy immediately!

 

Customize It

  • For a vegan version: use nut milk, a vegan yogurt, and vegan chocolate candies.
  • To avoid added sugar: use unsweetened milk and yogurt, and use additional fruits or veggies as toppings instead of the candies. Some ideas include blueberries as planets, puffed quinoa or chia seeds as snow, yellow carrot slices cut into stars, etc.
  • Sneak in some veggies: add a handful of frozen, steamed cauliflower into the smoothie.
  • Don’t have blue spirulina? Achieve a blue color just with blueberries (although it may have a reddish tint depending on your berries).
